  • 1 1/2 pounds butternut squash, peeled, seeded, small cubed
  • 2 Gala apples, peeled, cored and diced
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoon butter, chopped into sections
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans (or walnuts)
  • 1/4 cup dried cranberries

Instructions

  1. Step 1
    Preheat oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper to prevent sticking.
  2. Step 2
    Peel, seed, and cut the 1 1/2 pounds of butternut squash into 1-inch cubes. Peel, core, and dice the 2 Gala apples into 1-inch cubes, matching the squash size. Place both in a large mixing bowl.
  3. Step 3
    To the squash and apples, add 1 tablespoon cinnamon, 1 teaspoon vanilla, 2 tablespoons brown sugar, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Toss thoroughly until all pieces are evenly coated.
  4. Step 4
    Dot the mixture with 2 tablespoons of chopped butter. Spread the seasoned squash and apples onto the prepared baking sheet in a single layer, ensuring no overcrowding. Bake for 25 minutes.
  5. Step 5
    Remove the baking sheet from the oven and stir gently. Sprinkle with 1/4 cup raisins, 1/4 cup pecans (or walnuts), and 1/4 cup dried cranberries. Return to the oven and bake for another 15-20 minutes, or until the squash is fork-tender, apples are soft, and edges are lightly caramelized.

    Carefully remove the baking sheet from the oven. Let the Butternut Squash Apple Bake rest for about 5 minutes on the sheet before transferring to a serving dish. Serve warm.
